This simple salad requires only a few ingredients, as is traditional with preparing Mediterranean meals. It’s crunchy and light yet has a lot of substance for a salad — perfect as a lunch alternative to sandwiches and more.

Ingredients

  • 2 tomatoes, chopped
  • 3 orange heirloom tomatoes, chopped
  • ½ red onion, finely sliced
  • 1 yellow or red bell pepper, sliced
  • ½ cucumber, diced
  • 250 mL Sardo Calabrese Olives(drained)
  • 4 tbsp Sardo PurOliva Oil
  • Salt and oregano

Directions

  1. Combine all ingredients in a bowl.
  2. Toss and serve.
