📷 by @s_zanardi: "Saturday night mood a colorful rice dish with clams, mussels and shrimp and saffron just bursting with tons of flavor.
This is my Spanish paella! I didn’t use chorizo or Spanish paprika but I used white wine.

THE STOCK
Heat 5 cups chicken stock, be sure to taste stock & season it with salt if necessary. Add a few saffron threads and let stand.

SOFRITO
finely chopped 1/2 yellow onion, 3 garlic, cloves, 1/2 red pepper *I used sweet yellow peppers &fire roasted red pepper (gifted by @sardofoods ) sautéed gently in 3 tablespoons olive oil.

THE SEAFOOD (sanantonioseafood )
shrimp, clams, and mussels

cooking the paella: Add 3 cups rice to Sofrito, stirring, add 1 1/2 cup white wine, stirring for 4 minutes.
Stir in the stock, tomato cans, rough chopped, and 1 cup frozen peas.
Cook 15 minutes

Add the seafood: Nestle the mussels and clams into the rice . Add shrimp around the shellfish.

When Arborio rice is tender Sprinkle with parsley and serve.

You need these Olive + Brie Puff Pastry Rolls in your life. They are simple, tasty and will earn you some major kitchen cred. Stop what you’re doing and watch my reel on how to make these. Recipe is found below ⬇️

Ingredients:
·1 sheet frozen puff pastry, thawed
·3 tbsp olive oil
·½ cup kalamata olives, roughly chopped
·zest of half a lemon, peeled thick with vegetable peeler
·zest of half an orange, peeled thick with vegetable peeler
·3 cloves garlic, finely chopped
·¼ tsp fennel seeds
·1 cayenne pepper, thinly sliced (or ¼ tsp chili flakes)
·2 tbsp honey, divided
·6 ounces brie cheese, thinly sliced

Instructions:
1. Preheat oven to 375 F. Line a baking sheet with parchment pepper.
2. Heat oil, fennel seed, pepper, garlic, zest and olives in a small pot over low heat. Cook, swirling occasionally, until you start to hear and see the garlic and spices sizzle, 5 to 8 minutes. (Watch carefully). Keep cooking at the lowest heat possible until the spices are toasted and the garlic is golden brown, another 3 to 5 minutes. Remove from heat and discard the lemon and orange zest slices. Stir in 1 tbsp honey and set aside.
3. Unroll the puff pastry on a clean work surface. Spread olive mixture evenly over puff pastry. A brush works well to spread the oil. Evenly distribute brie evenly over the pastry.
4. Roll the pastry up as tightly as possible. If there is any remaining oil brush the roll with it. Using a sharp knife, cut into 8 rolls.
5. Place on the prepared baking sheet and bake 20-25 minutes or until the cheese is bubbly and the pastry is golden. Top with remaining honey, flakey sea salt and lemon zest. Serve immediately. You can find these and more delicious recipes @myprairiepantry

Warm potato salad with olives, pepper, parsley and red onion

1 pound baby potatoes, halved
1 cup red onion, thinly sliced
1/2 cup olive oil
3 tablespoons lemon juice
1 tablespoon honey
1/2 teaspoon ground cumin
1 teaspoon finely grated lemon zest
1 minced garlic clove
fresh rosemary, chopped
fresh parsley, chopped
salt and pepper
1 jar of Sardo party mix drained

Directions
Halve baby potatoes, toss with oil, chopped fresh rosemary, salt and pepper and roast in 400°F oven for 30 to 35 minutes, turning once, until golden brown.

Toss the drained party mix, oil, lemon zest and rosemary in a large skillet on medium heat. Bring to a gentle simmer and stir occasionally for about 5 min.

Toss potatoes with warmed olives and cup of thinly sliced red onion.

Make a dressing with 1/3 cup olive oil, 3 tablespoons lemon juice, 1 tablespoon honey, 1/2 teaspoon ground cumin, 1 teaspoon finely grated lemon zest, 1 minced garlic clove, salt and pepper. Whisk in a bowl until well combined

Top with freshly chopped parsley and enjoy !
