I made these roasted portobello mushrooms with pesto and bruschetta on Monday and the whole family loved them.

It was really easy and quick to prepare, perfect for those busy weeknights.

The star of this recipe were sardofoods pesto packets that add a burst of flavour to all your dishes. They are so versatile and come perfectly portioned so no messy jars. They also come in 3 varieties: arugula, sun dried tomato and basil pesto. Pick up a package to keep in the fridge next time you see them in the stores.

Bruschetta and Pesto Topped Portobello Mushrooms

Ingredients:

2 large portobello mushrooms
1 small container of Sardo Foods arugula pesto
1 cup diced tomatoes
Pinch of salt
1 tablespoon olive oil
¼ cup shredded cheese

Method:

Preheat oven to 400F.

Wash the portobello mushrooms and remove the stems. Lightly salt them and place on a baking sheet lined with parchment paper. If you decide to grill them, place them on a flat grill plate so that the stuffing doesn’t fall through the grill plates.

Chop the tomatoes and drizzle with olive oil and a pinch of salt.

Add a layer of Sardo Foods Arugula pesto and spread evenly over the two mushrooms.

Top with the tomato mixture and roast in the oven for 30 minutes.

Remove from the oven and top with the grated cheese. Lower oven to 360F and place back in the oven for 10-15 minutes longer. Remove from oven and let cool slightly. Serve and enjoy.

Ingredients:
All recipes require
1 malawach round
1 egg, beaten .
Option 1:
60 grams frozen spinach, defrosted and liquid squeezed out.
1/2 cup ricotta cheese
1.5 tbsp pesto sauce
1/4 cup chopped olives
Freshly ground pepper .
Option 2:
1 tbsp olive dip
2/3 cup goat cheese
1 tbsp each fresh mint and fresh basil
1 tbsp zaatar, plus additional to sprinkle on top

Option 3:
1 tbsp pesto sauce
1/2 cup grated cheese (I used a cheddar and mozzarella blend)
1/4 cup crumbled goat cheese
1 tbsp chopped sundried tomatoes
2 tbsp chopped olives
Fresh basil, chopped
Sesame seeds for garnish
Balsamic glaze, if desired .

Directions:
Preheat oven to 375°F.
Remove Malawach round from freezer. As soon as it is a tiny bit thawed, roll it out on a heavily floured surface. .
For option 1 - mix together spinach, ricotta, 1 tbsp pesto, olives and pepper. Spread onto malawach gently.
For option 2 - gently spread olive dip on malawach. Top with cheese, fresh herbs and zaatar.
For option 3 - gently spread pesto on malwach. Top with cheese, sundried tomatoes, basil and olives. .
Using a pizza slicer, cut malawach round into 12 “pizza slices”. Roll each one up, starting from the outside. Place on parchment lined baking sheet, brush with egg and garnish with remaining pesto (option 1), zaatar (option 2) and sesame seeds (option 3). .
Bake for 15-17 minutes, until lightly browned. .

INGREDIENTS ⁣
•2 cups all purpose flour ⁣
•1 cup of water ⁣
•2 tablespoons of olive oil
•2 tsp active dry yeast ⁣
•1 tsp sugar⁣
•1 tsp salt ⁣
•1 tsp garlic powder ⁣
•1/2 cup sundried tomatoes, thinly sliced ⁣
•1 tbsp minced garlic
•2 tsp rosemary, fresh or dried ⁣

HOW TO ⁣
•Preheat oven to the lowest temperature; appx. 175 degrees ⁣
•In a stand mixer, add water and sugar and let dissolve. Add the yeast once the sugar is dissolved and let sit for 5-10 minutes ⁣
•Once the yeast has bubbled and frothed, add the flour, olive oil, salt and garlic powder to the mixer and mix with the dough hook attachment ⁣
•Once the dough has formed a ball and pulls away from the sides of the bowl, remove the dough and place in a well-oiled bowl. Cover with plastic wrap, and place in the oven to rise for appx. 40 minutes. Turn the oven off⁣
•Once the dough has risen and doubled in size, punch the dough down, and let rise again for another 25-30 minutes.
•Once risen, press into a well-oiled oven-safe skillet. Cover with plastic and place in a warm place for another 20 minutes⁣
•Preheat the oven to 375 degrees⁣
•After the dough has rested, use your fingers to make indents in the dough. Drizzle olive oil into the indents, and place sundried tomatoes onto the dough. Sprinkle rosemary and minced garlic on the dough and put in the oven to bake for 30-35 minutes ⁣"
