To a bowl, add some softened cream cheese, kewpie mayo, parmesan cheese, shredded mozzarella, chopped sardo foods marinated artichokes, and chopped spinach. Mix it all together until it is fully combined.
Add in your basil, garlic powder, salt, and pepper to taste. The sardo foods marinated artichokes are already packed with flavour so you don’t need to add much else.
Grab a wide-mouthed bowl (a pie tin also works) and fill it with water. Cut the spring roll rice paper in half and then dip it in the water and let it sit for about 5-10 seconds. You don’t want it to be too soft otherwise it will get stuck when you start to wrap it. Just remember, it will start to loosen up when you place it on a cutting board/surface to start wrapping.
Place about 1/8 cup of the spinach and artichoke filling into the centre and spread it out lengthwise.
Fold in both ends vertically and then roll horizontally to enclose the filling. Make sure you roll it up nice and tight so the filling is secured.
To a pan on medium heat, add a bit of oil and then add the spring rolls (fold side down first). Let it cook for 5-7 minutes on each side (or until it has a nice golden brown colour).
All that's left to do is enjoy these artichoke dip spring rolls!
