Classic Greek Salad

 1 small red onion, halved and sliced
 ¼ cup red wine vinegar
 1 lemon, juiced and zested
 1 tsp honey
 1 tsp dried oregano
 ¼ cup extra-virgin olive oil, extra for drizzling
 12 small tomatoes, quartered
 1 ½ cups cucumber, sliced
 4 oz feta cheese (block)
 Salt and pepper for seasoning

Soak red onion in a bowl of salted ice water for 15 minutes.

Whisk red wine vinegar, lemon juice and zest, honey, oregano, 1/2 tsp of salt and 1/4 tsp of pepper in a large bowl. Add olive oil and continue whisking.

Add tomatoes, olives, and cucumber slices. Drain and add red onion. Toss.

Add evenly-sized blocks of feta cheese depending on servings. Top with oregano, olive oil, and pepper. Serve.

Tip: substitute black olives for Sardo Whole Kalamata Olives for a uniquely Greek taste..
