This creamy mushroom pasta recipe is the ultimate comfort food, made with pappardelle pasta, rich heavy cream, garlic, spinach, and Sardo Mushroom Bruschetta. Finished with Parmesan and a touch of lemon, this easy pasta dish is perfect for cozy weeknight dinners or entertaining.
Bring a large pot of salted water to a boil and cook the pappardelle according to package instructions. Reserve ¼ cup pasta water before draining.
While the pasta cooks, heat olive oil and spinach in a large skillet over medium heat. Add garlic and lemon juice. Sauté for 60 seconds until fragrant (do not brown).
Pour in chicken broth and heavy cream. Stir in Sardo Mushroom Bruschetta and season with salt, black pepper, garlic powder and red pepper flakes. Simmer 4–5 minutes until slightly thickened.
Add cooked pasta to the sauce along with reserved pasta water. Toss gently until the pasta is fully coated and silky.
Remove from heat and stir in Parmesan until melted and creamy.
Taste and adjust seasoning as needed.
Serve warm with extra Parmesan on top.
