Mediterranean Couscous Salad

This Mediterranean couscous salad is perfect party food and a glorious salad. Made with easy-to-prepare couscous and crunchy veggies with a hit of feta and scrumptious Sardo olives! @nobleveggies

What you need

 1 ½ Cup Wheat Couscous
 1 ½ cups Vegetable broth
 ½ English cucumber, seeded and cubed
 1 Cup of cherry tomatoes, halved
 1 Yellow bell pepper, diced
 ½ Cup of Feta cheese, cubed
 ¼ Cup of Fresh basil, chopped
 ¼ Cup of Olive oil
 3 tbsp Red wine vinegar
 ½ tsp Lemon juice
 Salt and pepper to taste

Let's get Started


In a saucepan, bring the vegetable broth to a boil.


Remove from the heat and add the couscous. Cover and let it cook for 5 minutes. Break up the couscous with a fork and let it cool.


In a small bowl, combine the oil, red wine vinegar, lemon juice, salt and pepper.


In another bowl, add the couscous, the vegetables, the cheese and the vinaigrette.


Garnish with basil. Mix and serve.
