Mediterranean Couscous Salad

This Mediterranean couscous salad is a perfect party food and a glorious salad. The best part it does not even taste like your having salad! Made with easy to prepare couscous and crunchy veggies with a hit of feta and scrumptious olives!

 1 ½ cups wheat couscous
 1 ½ cups vegetable broth
 ½ English cucumber, seeded and cubed
 1 cup cherry tomatoes, halved
 1 yellow bell pepper, diced
 1 cup Sardo Pitted Kalamata Olives, halved
 ½ cup Sardo Marinated Artichokes
 ½ cup feta cheese, cubed
 ¼ cup fresh basil, chopped
 ¼ cup olive oil
 3 tbsp red wine vinegar
 ½ lemon juice
 salt and pepper to taste

In a saucepan, bring the vegetable broth to a boil.


Remove from the heat and add the couscous. Cover and let it cook for 5 minutes. Break up the couscous with a fork and let it cool.


In a small bowl, combine the oil, red wine vinegar, lemon juice, salt and pepper.


In another bowl, add the couscous, the vegetables, the cheese and the vinaigrette.


Garnish with basil. Mix and serve.
