Mediterranean Salad with Olive Bruschetta topped with Black Olive Tapenade

The best side for anything on the barbecue is salad! But not just any salad, one that is crispy, crunchy and refreshing with some punchy flavours to pair with the bold flavour of the grill!

 1 cup Cherry Tomatoes, halved
 1 cup Red Peppers, chopped ½”
 1 cup Cucumber, chopped ½”
 ½ cup Red Cabbage, thinly sliced (optional)
 ¼ cup Red Onion, thinly sliced
 ½ cup Crumbled Feta Cheese
 Basil Leaves for garnish (optional)

Toss all vegetables together gently with olive bruschetta. Spoon into 4 bowls and top each with ¼ of the feta cheese and olive tapenade.
