Mussels & Shrimp with Kalamata Pesto

A seafood favourite with a Greco-Mediterranean twist - Kalamata Pesto.

 1 ½ tbsp butter, divided
 4 cloves garlic, minced
 1 cup white wine
 ¼ cup chopped fresh basil leaves, plus more for garnish
 8 oz mussels
 4 oz shrimp

Heat 2 tablespoons butter in a skillet over medium heat until softened (3-4 minutes). Stir in garlic and add white wine, then bring to a boil (medium-high heat).

Add mussels and stir for 1 minute.

Add shrimp, then cover the skillet, and cook until all mussels have opened (around 6 minutes), stirring occasionally.

Add tomatoes, and stir until mussels are coated in sauce.

Remove from skillet and add pesto until fully coated. Garnish as desired and serve.
