Spread pesto across serving dish where the cod filets will go, to desired thickness.
Heat blended oil and garlic in a medium-sized, non-stick skillet at medium heat for 3 minutes.
Sear cod filets on both sides, 3 minutes each or until golden-brown in colour, and flaky in texture.
Transfer filets to pesto area on serving dish. Add lemon wedge and basil leaves to preference. Serve.
