A light, fresh salad with diverse flavours in avocado and sundried tomato pesto.
Toss spinach, arugula, cherry tomatoes, and avocado.
Drizzle with olive oil, and sprinkle with salt, pepper, and any choice of seasoning (if desired).
Use a marinade brush to spread sundried tomato pesto across chicken breasts. Slice chicken breasts. Serve on top of salad mix.
