Tuscan Sausage and Sundried Tomato Penne

Brings rustic Tuscan flavour and presentation to the table while being easy to make.

 1 lb whole grain penne pasta
 1 lb Tuscan sausage, sliced
You can substitute for 1 pack of Sardo Select Herb & Garlic Marinated Shrimp if you prefer.
 2 tbsp extra-virgin olive oil
 4 garlic cloves, minced
 ½ onion, chopped
 1 pack Sardo Sundried Tomatoes, sliced thinly with marinade reserved
 ¼ cup fresh basil leaves
 salt and pepper to taste
 ¼ cup Parmesan cheese, grated finely

Cook pasta according to instructions on its packaging. Add salt to boiling water.


Sauté sausage, 1 tbsp olive oil, garlic, onions, and sauce in a skillet over high heat. Continue until sausage is cooked through and slightly browned.


Drain pasta and add sausage with sauce, sundried tomatoes, and Parmesan cheese. Add salt & pepper to taste and garnish with basil leaves. Serve.
